Venison cutlet cooking
The other day my friend shared me a piece of venison. So today I asked my wife to cook something using the venison. (check the previous blog shows you how I got the venison.) (The bigger one is round, and the smaller one is loin.)To start to cook them, first of all, I put them on the cutting board with no plan.Well, what shall we cook?OK, no idea, give up!So I asked Mr. Google. As a result of my research, we decided to make a venison cutlet that seems to be the easiest to make, needs no preparation.I used only round meat this time.So the venison cutlet recipe is released!!Revealing a chef's secret recipe of venison cutlet!(It's probably the same as the basic recipe for pork cutlets.)① Cut the venison into pieces.② Coat the cut meat with flour.③Dip them in mixed egg and coat with bread crumb.⑤ Fry them in oil with medium heat. For safety reasons, it's better to cook it well to kill parasites they might be living in.However, it will get hard if you fry it too much, so be careful not to fry it too much.⑥ Serve with cabbage, pour a sauce on them, and it's done.It was a kind of light taste(not much fat) and very delicious. It tasted like a pork fillet cutlet. This time, the venison was well blood drained, so it was not gamey at all. It tasted excellent. All gibier meat tastes different. The taste depends on what they eat, season, adult or child, male or female, and more. Also, It depends on how the hunter treats it after they hunt. Some gibier have a unique gamey smell. If I have a gamey meat. I could notice it's dear meat straight away.I think many people don't like the gamey taste very much. I personally love venison with low fat and high protein. And it's organic and free range. In Keihoku, deer are familiar to us. I see them every day. So eating venison made me think about we are taking dear's and something's life to live.If you want to try venison cutlet,You can Chef's venison cutlet at the restaurant Keihoku. It's delicious, so please give it a try.-------- Restaurant KeihokuP.N. 075-854-003315 -2 Machida, Shimonaka-cho, Keihoku, Ukyo Ward, Kyoto City Postal code 601 0533(Closed on Monday afternoon, and Tuesday)http://www.keihoku-m.com/
Wild Satoyama sharing
Mr. T comes to our office sometimes suddenly.Mr. T "Hey how you going!? Would you like some dear!?"Me "What!? Dear!? Meat!?"Mr. T "Yes, I got a piece of venison from a hunter friend."Me "Yes!? Yes, please!! Thanks!"Mr. T "Do you have a knife and cardboard!?"So I prepared a knife and cardboard for him. Then our office became a temporary butcher shop.Mr. T "This part is loin. It's tender and tasty. don't cook it too much just sear it.」Mr. T "This part is round. You can make a venison cutlet."Me "Sounds yum."After the lecture we share the meat with everyone in office. It's great present isn't it !? This is Keihoku style. Thanks Mr. T !I will give a report on this blog when I cook the venison. Don't miss it!
Keihoku sports day
I joined a local sports day today. There are many easy competitions at the sports day anyone can join from young to old.beanbags toss. Each team member tries to throw small beanbags into a basket placed on top of a high pole. This is Intervillage relay using cardboard boxes as baton.I think It's a good opportunity for Keihoku locals and Keihoku newcomers to get to know each other. After finish the event we have a party with neighbors to keep the village connection strong.
Night time is getting longer
We have no light of the neon signs. So it gets dark at night time as it should be.It's already dark when I go back home from work.No one is walking on the street, but I see wild animals often.I saw a wild boar family today on the way home.I see them once or twice a month. But I didn't see them that often before.Drove 2km after seeing wild boar family, raccoon dog come out.Ofcourse, I see deer very often. I see twenty deer sometimes.I would love to catch them by a rope like cowboys do if I could. (Maybe I need a license.)The other day, I saw a Japanese black bear for the first time. You'd better watch out animals while driving mountain road at night time. They will hit you. Or you will hit you.Drivers get annoyed by Anomals. But animals get annoyed by drivers.Let's get along with them. When I get to my neighborhood, an old neighbor dog is welcoming me coming back."Hey, you back!" he says. When I moved to my house 3 years ago, the dog used to pooed his poo in front of my house. But he stopped doing.Maybe he gave me his territory and accepted my family as his mates.
Mushroom finding walk
Autumn is mushroom season so I took walk mountain nearby to find mushrooms with my daughter and her friend for an hour. We found some mushrooms, but they don't look tasty.Like this. And this.I picked this mushroom up and smelled it. It smelled sour.My daughter said, "Ohh dad, it smells like you!"Ohh thank you I am very happy to hear that comment.... NOT!!We couldn't find edible like mushrooms but we enjoyed the smell of Autumn and the sour smell...
Akebi grows wild with vines on the net of the field.I love wild edible fruits cos they grow naturally and no need to take care like vegetables in the field.Thank you fruiting this year again!Have you ever eaten Akebi? It has full of seeds and not much to eat. But it tastes good with a gentle sweetness. It's a bit sticky, and taste like banana or persimmon. The skin of akebi is edible if you cook.so I asked my wife to cook akebi stir-fry with miso and eggplant. The skin has a strong alkali, so it's better to fry over low heat for a long time.ta-dah!!It has a unique bitterness like a bitter gourd and eggplant-like texture. It tastes GOOD?... maybe more like OK.It is edible. But I couldn't eat it much because of the alkaline taste. I felt a strange fullness feeling, maybe because of the effects of alkali, and honestly, I don't want to eat it again for this year. It might be good for people who want to lose bodyweight.I should have removed the alkali off more somehow. So I checked how to remove the bitterness and the alkali. And I found a way that soaking them in rice washed water overnight. Then they will be easier to eat.If the alkali is removed properly, it could be good as a side dish.I saw them sold in the farmers market Woody Keihoku, so if you are interested in, please try!
Primitive gathering life " tasting torreya-nuts"
I wonder how did people enjoy the harvest of Autumn in the hunting and gathering period?I think the people were busy harvesting various nuts, fruits and mushrooms. But I heard people from the age worked about only 4 hours a day, so it wasn't as busy as today. In addition, I imagine that it was happily busy like "Hey, look! there are nuts! And Here are mushrooms! yeah!". But thanks to modern technology, I can live a safe and comfortable life, so I don't want to live like the Jomon period. But I'm still attracted by a primitive lifestyle.Thinking about the lives of our ancestors, I decided to try the Torreya-nuts harvested last weekend. (The harvest is introduced on the blog on September 24.)Torreya-nuts have strong alkaline taste, so you can't eat them raw, but you can eat them if you roast them.I could have roasted them in the kitchen at home, but I decided to cook them the primitive way outside with my daughter. When the fire gets settled, put the nuts into the frying pan.Shake the pan sometimes to avoid burning.By high to medium heat, it took 15 to 20 minutes to get cooked and the color gets beautifully browned. We have to crack the shell to eat the nut.As I'm a rock 'n' roller I used rocks to crack them.Yaaa!!That's too strong.I found an easier way that peeling it by hand. After roasting them, the shell will get crack, so you can peel the shell off with your hands. The taste was much better than I imagined. It's pretty good.Personally, I felt it tasted like between chestnuts and walnuts. It's bitter if you don't peel the thin skin, but I personally liked it the bitterness.By the way, I tasted it raw, it was so bitter and not edible. My daughter doesn't like walnuts, but she liked it.So she was happy to eat it saying, 'It's so delicious.'.*Children should be careful not to eat the nut too much. The alkaline is so strong, so pregnant women should not eat them.My daughter probably wouldn't eat kaya nuts if they were served normally at home, but I think the cooking process was fun and so she felt taste better than usual. Why don't you gather nuts and make a fire to eat them? It's so fun.Make your primitive DNA happy. Another good is,My daughter listens to me well, while doing outdoor cooking as I'm a teacher. I think that can improve a family relationship.Great isn't it?So why not give it a shot?
Autumn nuts "Jujube"
When I was traveling in China, I loved jujube(Chinese date) .It has great nutrition, such as fiber, vitamin b, potassium, folate, iron, calcium, phosphorus. It was popular as Chinese medicine. The other day I found and bought jujubes in Woody Keihoku (Farmer's market). The texture is like an apple texture. I like its sweet and sour taste. When I go back home I talk about jujube to my family."I found and bought jujubes at the market but I've never seen jujube tree."My mother said,"There is a big jujube tree nearby. "So I went to have a look jujube tree at Neighborhood's yard."Wow, it's much bigger than I imagined."I talked the neighbor,"Hi, you have a great jujube tree. I did not know this is a jujube tree. Can I have a look closer?"Neighbor said,"Of course, have some! Children don't know this nut is edible but this was a snack for me when I was a kid."I got a lot of jujubes from my neighbor."I'm so glad. Thank you so much"
