PIZZA at the Log House Cafe
Have you ever dreamed of living in a log house in the forest?There aren't many companies that make log houses in Japan, but there is one in Keioku.It's Kamonose log.(This photo was taken a few years ago when I was given a tour of the factory behind the cafe.)What we were shown at this time was a super huge log house.Log houses are nice and feel warm, aren't they?Each log is made by artisans hands.Kamonoselog offers not only log houses like the one shown in the photo, but also other styles such as country style and Japanese style log houses. My family went to Cafe Sava, which is run by Kamonoselog.The restaurant is also used as a model room for Kamonoselog, uses a lot of wood, making it a stylish and relaxing space.On weekends and holidays, the restaurant serves pizza by wood fired brick oven.(If you want a brick oven for your home or cafe, I'm sure they'll make it as an option when you build your house.)I ordered a margherita, anchovy sausage, and another (I forget the name). Pizzas are 1200 yen per piece.The tomato sauce has great acidity and the anchovies have the awesome flavor.All the pizzas were very good. ANd I ordered a beer. The beer set is 1,500 yen. Flowers for spring dining table
Today, my wife cooked a side dish for our dinner was boiled canola flowers.The canola flowers she used were sold at the roadside station Woody Keihoku. It was 150 yen.We call canola flowers as "Nanohana" in Japanese is a general term for cruciferous flowers. There are many kind of edible flowers such as canola, turnip, radish, Chinese cabbage, and broccoli.Cruciferous vegetables planted in autumn and bloom in spring, you can eat any of their flowers.I like the taste of canola flowers have a good sweetness and bitterness.Everyone, please enjoy spring with edible flowers!
Wild vegetable tasting "Horsetail"
I found some shoots(stems?) of field horsetail. It's still cold but spring is getting closer day by day.I pick them up with my daughter. these shoots are edible so we tried them.Soaking them in water to get rid of harshness. (Better to boil them.)Fried them with soy sauce and sugar(mirin sake).It was pretty good taste.Many wild vegetables or herbs are coming out in springtime. It's so fun to taste them.No need to look after them they just grow naturally and organically.I imagine that hunter and gathering era people could not wait to see spring.And my DNA might remember the taste and my body gets energized by eating wild plants. Now I feel I'm so rich.
Do you know sunchoke (Jerusalem artichoke)?A root vegetable looks like ginger.I didn't know about sunchoke until I moved to Keihoku. (Sunchoke is Kikuimo in Japanese.)It is native to North America. And it was introduced to Japan as an ornamental flower during the Edo period, and now it has spread all over Japan and now they grow wild.I've heard that it grows will in the riverbed of the Kamo river in Kyoto city center.It grows naturally, so it's relatively easy to grow.I found them in the roadside station Woody Keihoku. I bought them. Sunchoke contains inulin and seems to be good for losing weight and diabetes.The texture is like lotus root.I like to eat it deep fried. If you fry it, it becomes soft and delicious.You can eat it raw, so you can use it as a salad, you can enjoy the crunchy texture.This time, I asked my wife to make a stew using sunchoke.Sunchoke still has a crunchy texture after cook and delicious.I think sunchoke is a rare vegetable you don't often see at supermarkets.If you find it on sale in Woody Keihoku, please give it a try.
My wife took my child to a hospital last week, and the doctor told her that my child should refrain from wheat flour because he is allergic to wheat.She went to a roadside station "Woody Keihoku", found Keihoku rice flour, so she bought it right away. So we've been using the rice flour instead of wheat flour for the past few days.It's very good.We often eat pancakes for breakfast, so this morning I made pancakes using the rice flour.The following are the ingredients for 5 servings (roughly).・Rice flour 300 g ・Soy milk 200 ml? (Use it until the dough gets good smoothness.)・2 eggs・3 tbsp yogurt・Baking soda 1 teaspoonA handful of raisins, walnuts, cashew nuts, almonds, pumpkin seeds, sunflower seeds, and dates.I mixed the ingredients and fry it using olive oil.Adding yogurt is my secret to make it fluffy and delicious.How does it taste?It must be good.It was delicious to me.It's even better than wheat flour pancake.A gluten-free diet seems to be good for the health, so try making rice flour pancakes with Keihoku rice flour.
Taste spring "butterbur shoot"
It is spring according to the calendar, but it is still cold.Daylight hours getting longer and it's getting warmer day by day.I found some butterbur shoots in my garden.As it is a warm winter this year, they seem to come out earlier than usual.so I harvested them and cooked to taste the spring.I fried the butterbur shoots with potato starch with water.And put some salts on it.The unique bitterness is really good.I am very happy to be able to feel spring through my five senses.There are many attractions of living in Satoyama, but it is the most fun to feel spring with tastes.Don't you think it's cool to taste spring with wild vegetables?I'm looking forward to eating the wild vegetables growing around my house.

I'd like to introduce a patisserie and cafe "MaLieu" just opened this month.The owner, Natsumi Katsuyama, graduated from a confectionery school.She was trained to make cakes in the manufacturing department of Marblanche. (Famous cake shop in Kyoto.)Malieu sells cakes and baked sweets and has a cafe.You can choose your favorite cake or drink. I asked Ms. Katsuyama "what would you recommend!?""I recommend cream Cookie puff, and Mont Blanc is the best among cakes.""Ok" I decided to have Mont Blanc.And she said, "It's the least sweet cake in this window case. It's not too sweet, and the taste of chestnuts spreads gently in your mouth."She used to be a Mont Blanc chef at another cake shop.The chestnut cream on the sponge is very fine and beautiful.It has homemade simmered chestnut inside.(But the homemade version is only available in limited quantities for this season.)You can enjoy the original taste of chestnuts to the end.I chose a cafe latte for the drink.
