I found butterbur shoots(Fukinoto) during my walk, of course I harvested them.
So, today I will introduce how to make fuki miso.
1. Fukinoto(butterbur shoots) 90 grams (This was I could harvest today.)
2. Wheat miso: 140 grams (Any kind of miso is OK)
3. Mirin(Kindo of sweet sake): 2 tablespoons
4. Sake: 2 tablespoons
5. Sesame: 2 tablespoons
6. Rice oil (Any vegetable oil)1 tablespoon
I think that the amount of ingredient should be adjusted to your liking.
As Fukinoto is a little bit bitter, so I put some sesame, and I put a lot of mirin and sake so that would be easy for children to eat.
You can you use sugar instead of using sake and mirin.
How to make
①mix miso, mirin, sake, sesame
②Cut the butterbur shoots to 5 mm.
③ Put the oil in the pan and stir fry the butterbur shoots for 1 or 2 minutes.
④ Bring to a low heat, and put all other ingredients you have mixed into the pan.Mix with butterbur shoots.
⑤ stir fry 1 mins to take the moisture away from (not too much).
It's pretty easy.
I ate immediately, but I love this unique and bitter taste.
It's very good with rice, also very good with sake too.
