Rice pancake

My wife took my child to a hospital last week, and the doctor told her that my child should refrain from wheat flour because he is allergic to wheat.

She went to a roadside station "Woody Keihoku", found Keihoku rice flour, so she bought it right away.

So we've been using the rice flour instead of wheat flour for the past few days.

It's very good.

We often eat pancakes for breakfast, so this morning I made pancakes using the rice flour.

The following are the ingredients for 5 servings (roughly).
・Rice flour 300 g
・Soy milk 200 ml? (Use it until the dough gets good smoothness.)
・2 eggs
・3 tbsp yogurt
・Baking soda 1 teaspoon
A handful of raisins, walnuts, cashew nuts, almonds, pumpkin seeds, sunflower seeds, and dates.


I mixed the ingredients and fry it using olive oil.

Adding yogurt is my secret to make it fluffy and delicious.


How does it taste?

It must be good.

It was delicious to me.

It's even better than wheat flour pancake.

A gluten-free diet seems to be good for the health, so try making rice flour pancakes with Keihoku rice flour.
